Grown in the dry lands of Rajasthan, ajowan carries a bold aroma reminiscent of thyme with a warm, peppery note. Whole seeds release their flavour gradually into curries, breads, lentils and fried dishes. In powder form, it blends smoothly into marinades, sauces and spice mixes, adding a bright, herbal intensity.
